Ideal candidate should be an F&B specialist with a proven track record in Food and Beverage with a minimum of 10 years experience at management level in a 5 star environment. Should have an educational degree or diploma from a recognized hotel/culinary school in food & beverage or catering. The position reports to and works closely with Head of Food & Beverage Operations and leads a team of over 100 associates.
Requirements
  • Ensuring each resort's highest standards are achieved and maintained in accordance with company specifications.
  • Sound knowledge of food costing and stock control.
  • Acting as a change agent, being innovative and introduction of new global trends.
  • Monitor the performance of each resort.
  • Ability to work under pressure in a fast paced environment.
  • Ability to work independently, show initiative, provide direction, manage multiple tasks and prioritize among assignments.
  • Expected to mentor the team and impart technical skills and experience.
  • Be hands on team player with excellent interpersonal and communication skills.
Key Tasks
  • To oversee and direct all aspects of the kitchen including purchasing, staffing, training, menu design and presentation in all resorts.
  • Ability to plan and design of new kitchens and kitchen improvements schemes and to keep abreast of new developments, techniques and equipment.
  • Assist with costing and pricing of menus and other food services having taking into consideration the profit margins laid down in the hotel budgets.
  • Work closely with Food & Beverage Managers and Executive Chefs of all resorts for all operations including provisioning and inventory control.
